What’s in a vanilla bean? I prepared this table with data from the same site that brought us yesterday’s excellent description of industrial vanilla extraction:

Vanilla bean composition (planifolia)

25 % sugar
15 % fat
15 to 30 % cellulose
6 % minerals
35 % water
